biodynamics
do you know what it is? i just found out. danny was telling me about it so i wikied it and it's fascinating. here's the link.
allow me to pique your interest:
Weeds are combated (besides the usual mechanical methods) by collecting seeds from the weeds and burning them above a wooden flame that was kindled by the weeds. The ashes from the seeds are then spread on the fields, then lightly sprayed with the clear urine of a sterile cow (the urine should be exposed to the full moon for six hours), this is intended to block the influence from the full moon on the particular weed and make it infertile.
505: Oak bark (Quercus robur) is chopped in small pieces, placed inside the skull of a domesticated animal, surrounded by peat and buried in earth in a place where lots of rain water runs past.
so awesome!

Potato Kale Enchiladas!
I made these last night with julie and laura. it took a while but it was so worth it. Here's the basic recipe (from Veganomicon)-
Sauce:
Dice 1 onion, chop 3-5 green chiles (I actually used canned, pickled jalapenos and it was fine)
In a largeish pan, saute onion in oil until softened, add:
chiles, 2-3 tsp chile powder, 1 1/2 tsp cumin, 1 can diced, roasted tomatoes with juice, 1 tsp sugar, 1-2 tsp salt
Bring to a simmer, then remove from heat
Let mixture cool, then blend until smooth
Filling:
Peel and dice 1 pound potatoes (I think we used about 5 potatoes)
Wash and chop 1/2 pound kale
Toast 1/4 cup pepitas (pumpkin seeds) and chop coarsely
Mince 4 cloves garlic
Boil potatoes until tender
Cook garlic in a big ol pot on medium-low heat until it's slightly browned, then stir in the kale and a little salt
Partially cover the pot to steam the kale until it's wilted
Add the potatoes, 1/4 cup vegetable broth (I used water), 3 tbsp lime juice, pepitas, some salt
Stir it up! Mash some of the potatoes as you stir, cook for 3-4 minutes
Construction Time:
**I kind of messed up on this part- the recipe instructs you to soften the tortillas in a warm, greased griddle so they don't break. This is important.**
Preheat oven to 375
Put some sauce in the bottom of a casserole dish (at least 11.5 x 7.5 in)
Heat a tortilla on each side, coat in sauce, put some filling in it, and roll it up. Repeat.
Put about 1 cup sauce on top, cover tightly with foil, bake for 25 min
Remove foil, bake for 10 more mins. Heat remaining sauce and put on top.
Chow down! Careful, they're really good.
